As a 3rd generation butcher & over 25 years of experience with his trade, Kevin Olson is still passionate about what he does. His great attention to detail, drive for excellence & raw imagination push him outside the boundaries & confinements of traditional butchery.

The accumulation of Kevin’s experiences have presented him with many opportunities to showcase his products. This has led him to receive numerous awards at local, state, national & international competitions.

Kevin feels he has come full circle returning to his roots & settling in his hometown of Spring Valley. One of his earliest work memories is stamping packages of meat for customers in the old Spring Valley Meat Locker alongside his mom. Paying homage to his mother with whom he worked side by side for many years, the decision was made to name the shoppe after her. A for Audrey.
